Spiced Banana and Date Loaf

INGREDIENTS

1 cup buckwheat flour

1/2 cup almond meal

1/2 cup tapioca flour

1/4 cup coconut sugar

2 tsp baking powder

1 tsp baking soda

1 tsp cinnamon

1 tsp ginger

1 cup dates chopped and soaked*

1 cup mashed banana

1/2 cup coconut or olive oil

2 eggs (can sub for chia eggs**)

1 tbs apple cider vinegar

pinch of salt


TO MAKE

Preheat oven to 170 C.

For chia eggs**, soak 2 tbs of chia seeds in 6 tbs of water until a gel is formed.

Soak* chopped dates in boiling water for at least 10 minutes to soften. Drain and combine with banana, oil, eggs and vinegar. Mix well. 

Add dry ingredients and stir to combine. Pour into a loaf tin greased or lined with baking paper and bake for 40 minutes or until skewer comes out clean. 

Let cool and enjoy still warm or wait a day for the flavours to fully develop and then toast lightly with butter.
